Ingredients

  • 4 each Coles RSPCA Approved Chicken Maryland Supreme
  • 400 ml coconut milk
  • 1 each onion
  • 1 tbsp ginger
  • 3 cloves garlic
  • 1.5 tbsp curry powder
  • 2 each tomatoes
  • 100 g spinach
  • 0.5 bunch coriander
  • 1 cup rice
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 0.5 tsp pepper

Instructions

  1. Heat the vegetable oil in a large pot or deep skillet over medium heat.
  2. Add finely chopped onion and sauté until softened, about 3-4 minutes.
  3. Stir in minced garlic, grated ginger, and curry powder, and cook for an additional 2 minutes until fragrant.
  4. Add chopped tomatoes and cook for 5 minutes, letting them soften and form a thick base.
  5. Place the chicken Maryland pieces into the pot and briefly brown them on all sides.
  6. Pour in the coconut milk, add salt and pepper, and bring to a simmer.
  7. Cover the pot, reduce the heat to low, and let the curry cook for about 30 minutes, or until the chicken is cooked through and tender.
  8. Stir in the spinach during the last 5 minutes of cooking until wilted.
  9. Serve the curry garnished with chopped coriander alongside steamed rice.
