Coles beef & pork curry thai

Savory beef and pork meatballs slow-cooked in a fragrant coconut curry sauce, served with fragrant jasmine rice and fresh coriander, bringing a taste of the tropics to your table.

Ingredients

  • 350 g Coles Beef & Pork Meatballs
  • 400 ml Coconut milk
  • 3 tbsp Red curry paste
  • 2 cup Jasmine rice
  • 0.5 bunch Coriander
  • 1 each Lime
  • 1 tbsp Vegetable oil
  • 1 tsp Brown sugar
  • 2 tbsp Fish sauce

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add the Coles Beef & Pork Meatballs to the pan and cook until browned on all sides, about 5-7 minutes. Remove meatballs and set aside.
  3. In the same pan, add the red curry paste and cook for 1 minute until fragrant.
  4. Pour in the coconut milk and stir to combine.
  5. Add fish sauce and brown sugar, stirring until dissolved.
  6. Return the meatballs to the pan and simmer for 15 minutes, stirring occasionally, until the meatballs are cooked through and the sauce thickens.
  7. While the meatballs cook, prepare jasmine rice according to the package instructions.
  8. Once the curry is ready, garnish with fresh coriander and squeeze lime juice over the top.
  9. Serve hot with the cooked jasmine rice.
