Spicy Chicken Tikka Masala

Instructions

1. In a bowl, mix yogurt, 1 tsp garam masala, 1 tsp cumin, 1 tsp coriander, 1 clove minced garlic, and a pinch of salt. Add diced chicken and marinate for at least 30 minutes.
2. Heat 1 tbsp of vegetable oil in a large pan or skillet over medium heat. Add the marinated chicken and cook until browned. Remove and set aside.
3. In the same pan, heat another tbsp of oil and add chopped onion. Cook until softened. Add grated ginger, 2 minced garlic cloves, 1 tsp cumin, 1 tsp garam masala, 0.5 tsp coriander, and 0.5 tsp cayenne pepper. Cook for 1-2 minutes until aromatic.
4. Dice the tomatoes and add them to the pan. Cook for 5-7 minutes until they break down into a sauce. Use a spoon or potato masher to help break them down.
5. Pour in the cream and mix thoroughly. Add the cooked chicken back to the pan and simmer for 15-20 minutes, stirring occasionally.
6. Garnish with fresh coriander. Optionally, serve with naan bread to enjoy the full experience.
