Creamy Chicken and Mushroom Pasta

Instructions

1. Cook the pasta in salted boiling water according to the package instructions. Reserve 1/2 cup of pasta water and then drain the rest.
2. While the pasta cooks, heat 1 tbsp of olive oil in a large pan over medium heat.
3. Add the diced chicken breast to the pan, season with salt and pepper, and cook until golden brown and fully cooked. Remove the chicken and set aside.
4. In the same pan, add another tbsp of olive oil and sauté the diced onion and minced garlic until fragrant.
5. Add the sliced mushrooms to the pan and cook until they release their moisture and become tender.
6. Reduce the heat and stir in the thickened cream. Allow the mixture to simmer gently.
7. Stir in the cooked chicken and season further with salt and black pepper to taste.
8. Add the cooked pasta to the sauce, tossing it gently to coat. If the sauce is too thick, use the reserved pasta water to loosen it to your desired consistency.
9. Turn off the heat and stir in the grated Parmesan cheese and chopped parsley.
10. Serve the pasta warm, garnished with extra Parmesan and parsley if desired.
