Ingredients

  • 1.2 kg Lamb Loin Chops
  • 240 g Salad Baby Leaf Spinach & Rocket
  • 2 tbsp Lemon juice
  • 2 tsp Dried oregano
  • 4 tbsp Extra virgin olive oil
  • 2 tbsp Mustard
  • 4 cloves Garlic
  • 200 g Cherry tomatoes
  • 1 each Cucumber
  • 150 g Feta cheese
  • 1 each Red onion

Instructions

  1. In a bowl, prepare the marinade by mixing lemon juice, dried oregano, extra virgin olive oil, mustard, and minced garlic.
  2. Coat the lamb loin chops thoroughly with the marinade and let sit for at least 30 minutes.
  3. In the meantime, prepare the salad by mixing baby spinach & rocket leaves, halved cherry tomatoes, sliced cucumber, crumbled feta cheese, and thinly sliced red onion.
  4. Preheat the grill or barbecue to medium-high heat.
  5. Cook the lamb loin chops for 3-4 minutes on each side or until they reach your desired level of doneness.
  6. Serve the grilled lamb loin chops alongside the fresh salad. Drizzle extra virgin olive oil over the salad if desired.
